The mythical Vermilion Bird of the South is the Chinese name for the group of constellations which includes Canis Major – ‘The Greater Dog’ constellation, and the Dog Star, Sirius. Hence my choice for the name for our Flagship wine.
The Vermilion Bird consists mainly of one specific vineyard of Shiraz in central McLaren Flat. It is unusually rich and full, making it the perfect choice for younger French oak and extended maturation. Depending on the vintage and the quality of the other wines in our cellar, 5-10% of Mataro or another vineyard of Shiraz may end up in the blend in order to ensure this is the best wine we can make from the vintage.
After a very closely monitored, hand plunged and managed ferment, the skins are pressed through a traditional basket press. The resulting wine goes straight into a new French oak Puncheon for three years of maturation prior to any additions to the blend. It's bottled on a low speed bottling line and sealed with hand selected cork. The bottles are individually printed and then wax dipped by hand.
